What is the difference between Mayonnaise, Whipped Salad Dressing and Homogenized Dressing?

While all three products are a creamy, thick, off-white product, the main distinction is the oil content. Mayonnaise by Canadian Food Inspection Agency standards must contain a minimum of 65% oil, Select Mayonnaise contains 78% oil. Whipped Salad Dressing is 35% oil and Homogenized dressing is 19% oil. Other important differences are the freeze/thaw stability of both Whipped and Homogenized Dressing. Because these products have been formulated with the prepared salad manufacturer in mind, their properties inhibit separation even after being frozen and thawed for use. When frozen Mayonnaise separates, the oil-egg emulsion is being broken.
